The engine begins beneath the surface. Agaporia restores the microbial networks that conventional farming stripped away, through no-till cycles and holistic grazing, returning the soil to its full living complexity.
What the soil holds, it gives back. The biological wealth restored underground becomes the vitality carried at the table.
Twenty-four percent of the estate, over 16 hectares, has been handed back to the wild. No planting, no clearing, no management. The land decides.
What grows back is the land remembering what it was before it was farmed. It chooses its own order.
Some of the olive trees were old before the idea of Agaporia existed. Hundreds of them, tended by hand on a cycle measured in centuries, alongside vines worked with the same patience.
They have outlasted everything around them. Every harvest is the land’s character, pressed into something you can taste.
At the centre of the estate is a two-hectare permaculture garden, and most of what reaches our kitchen is grown in it. The distance from soil to plate is measured in steps.
This is where the whole system arrives at The Regenerative Table: restored soil, returned water, the work of every season, harvested at the hour it is wanted.
Zabella is the estate’s enoteca, a cellar of small-batch biodynamic labels and rare vintages chosen by a single measure: that each grower treats their land as a force of restoration, as Agaporia treats its own.
