These trees have survived drought, frost, war, and a hundred changes of hands. They were old before the estate had a name. Agaporia’s work is to keep them, and to leave them stronger than it found them.
They are farmed for what they are, drawing slowly on the mineral wealth of restored soil, and the fruit carries a density that forcing could never produce, the concentrated character of a landscape in full health.
To taste their oil is to taste all of that: the centuries in the ground, the soil brought back, the patience of a harvest that cannot be hurried.
