The Kitchen Has No Plan

The gardeners bring what the morning gave, and the chefs decide what dinner is.

We grow forgotten varieties, the ones chosen for taste alone, the ones that would not survive a crate. They only have to walk across the garden.

We put the vegetable on the plate the way others put the grand cru in the glass. A carrot pulled from living soil and slowly roasted. The estate’s oil, its herbs, its honey, gathered around it.

Every other ingredient comes from people we know and trust. The ones who make the pecorino, who keep the vines, who mill the grain. Nothing reaches this kitchen from a stranger, and nothing travels more than a hundred kilometres to get here.
